Ingredients
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 cup rice (uncooked)
- 1½ cups chicken broth
- 1 can black beans (drained)
- 1 cup corn
- 1 cup diced tomatoes
- 1 tbsp taco seasoning
- Salt to taste
- Optional: cilantro, sour cream, cheese
