This refreshing, nutrient-packed cucumber salad is not only delicious but also helps support weight loss. With metabolism-boosting ingredients and a creamy yogurt dressing, it’s a perfect light meal or side dish. Serve it with crispy garlic toast for a satisfying crunch!

Ingredients:

For the Salad:

  • ½ red cabbage (300g), thinly sliced

  • ½ green cabbage (300g), thinly sliced

  • 1 cucumber, sliced

  • 1 yellow chili, thinly sliced

  • 1 onion, thinly sliced

  • 1 tomato, diced

  • 1 green apple, diced

  • 1 carrot, grated

  • Fresh parsley & dill, chopped

For the Dressing:

  • 4 tbsp Greek yogurt (120g)

  • Juice of ½ lemon

  • 1 tbsp mustard

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ⅓ tsp black pepper

For the Herb Oil Drizzle:

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • ¼ tsp black pepper

  • Chopped parsley & dill

For the Garlic Toast:

  • Bread slices

  • Olive oil

  • 1 clove garlic, minced

Instructions:


  1. Prepare the Salad:

    • In a large bowl, combine red cabbage, green cabbage, cucumber, chili, onion, tomato, apple, and carrot.

  2. Make the Dressing:

    • In a small bowl, whisk together Greek yogurt, lemon juice, mustard, minced garlic, salt, and pepper.

    • Pour over the salad and toss well. Let it marinate for 10 minutes.

  3. Prepare the Garlic Toast:

    • Preheat oven to 200°C (400°F).

    • Brush bread slices with olive oil and rub with minced garlic.

    • Bake for 5-7 minutes until golden and crispy.

  4. Make the Herb Oil:

    • Mix olive oil, minced garlic, black pepper, parsley, and dill in a small bowl.

  5. Serve:

    • Drizzle the herb oil over the salad.

    • Enjoy with warm garlic toast on the side!
