Instructions
Beat cream cheese, powdered sugar, vanilla extract, and optional heavy cream until smooth and creamy. Chill for at least 15 minutes.
Simmer strawberries with sugar and lemon juice until berries break down. Mash slightly and add cornstarch if needed to thicken. Cool completely.
Roll out refrigerated pie dough and cut into circles or rectangles.
Place a spoonful of cheesecake filling in the center of each dough piece, top with strawberry filling, then fold and seal edges with a fork.
Refrigerate filled pies for 20 to 30 minutes to firm up before frying.
Heat neutral oil to 350°F (175°C) in a deep skillet or pot.
Carefully place pies in hot oil and fry for 2 to 3 minutes, turning halfway, until golden brown and crisp. Drain on paper towels.
Dust warm fried pies with powdered sugar before serving.
