Ingredients:
• 800 g boneless chicken (small cubes)
• 2 tbsp oil (30 ml)
• 1 medium onion, finely chopped
• 1 tbsp ginger garlic paste (15 g)
• 1 tsp salt (5 g)
• 1 tsp black pepper (5 g)
• 1 tsp red chili powder (5 g)
• 1 tsp paprika (5 g)
• 1 tsp cumin powder (5 g)
• ½ tsp garam masala (2 g)
• ½ cup capsicum, small cubes (75 g)
• ½ cup boiled corn (75 g)
• ½ cup mayonnaise (120 g)
• ½ cup shredded mozzarella cheese (100 g)
• 2 tbsp fresh coriander, chopped
Instructions:
1. Heat oil in a pan on medium heat.
2. Add chopped onion and cook until soft and light golden.
3. Add ginger garlic paste and cook for 1 minute until fragrant.
4. Add chicken cubes and cook on medium heat until fully cooked and slightly golden.
5. Add salt, black pepper, red chili powder, paprika, cumin powder, and garam masala. Mix well.
6. Add capsicum and boiled corn. Cook for 2–3 minutes (do not overcook, keep slight crunch).
7. Turn off the heat. Let it cool slightly for 3–4 minutes.
8. Add mayonnaise, shredded mozzarella cheese, and fresh coriander. Mix until creamy and well combined.
You can use it for samosa, tacos, tortilla wraps, grilled sandwiches, quesadilla
